The ingredients needed to make Vegetable Medley:
- Make ready 250 Grams Brussel Sprouts
- Prepare 1 bunch Spring Onions
- Take 250 Grams Carrots
- Take 100 Grams (2 med) Parsnips
- Get 265 Gram Tin of Mixed Beans
- Make ready 160 Gram Tin Sweetcorn
- Prepare 1 Vegetable Stock Cube
- Take 250 mls Hot Water
- Prepare Handful Fresh Coriander
Instructions to make Vegetable Medley:
- Remove brown outside leaves of Sprouts, remove brown part of stalks. Dice. add to a medium saucepan.
- Peel, slice and dice Carrots. add to pot.
- Peel, slice and dice Parsnips. add to pot.
- Remove any dried or brown parts of the Spring Onions. Remove root sections. Dice everything else into small bits and add to pot.
- Drain tins of mixed Beans and Sweetcorn. Add to pot.
- Stir well. Add Coriander leaves. Stir again.
- Put Stock cube in about 1/2 pint, 250 mls Hot Water, stir, then add to pot. Bring to the boil, then cover and simmer for about 15-20 minutes, stirring occasionally, until all vegetables are soft, but not mushy.
- Can be eaten on its own, or as a side dish. Can also be frozen up to 6 months, or blitzed to make soup. Enjoy!!
