Instructions to make Valpapdi (Mangetout) ki Sabzi:
  1. Wash the veggies and pat them dry. chop the ends and cut them in medium size pieces. Steam them for around 15 minutes.
  2. Roast the peanuts and peel the skin and grid them in a mixer. Chop onions and dice the potato.
  3. Heat 2 tbsp Oil in a pan and add mustard and cumin seeds. Once they splutter add chopped garlic and sauté for 3 minutes
  4. Add diced potato and sauté for 5 minutes and then add chopped onions and sauté for 5 minutes.
  5. Add salt, turmeric powder and red chilli powder and mix and sauté for 3 minutes and add the ground peanut powder and mix well. Then add the steamed vegetables to it and mix well and keep a lid over the pan for 2 to 3 minutes
  6. Then add dry mango powder and mix well and cook for 3 minutes. Add chopped coriander to garnish. Serve hot with Roti and Mango pickle. Bon Apetite.
