The ingredients needed to make Yam Curry/Jimmikand Curry:
  1. Make ready 8-10 pieces Yam (chopped as shown in photo below)
  2. Prepare 1 tablespoon Yellow mustard seeds (soak in water for 1-2 hours)
  3. Get 1/2 tablespoon Black mustard seeds (soak in water for 1-2 hours)
  4. Get 1/2 tablespoon Poppy seeds (soak in water for 1-2 hours)
  5. Make ready 2-3 tablespoon Curd
  6. Prepare To taste Salt
  7. Get 1/4 teaspoon Turmeric powder
  8. Take 1 teaspoon Coriander powder
  9. Take 1/2 teaspoon Red chilli powder
  10. Take 1 tablespoon Lemon juice
  11. Get 1 pinch Asafoetida
  12. Get 1/4 teaspoon Black mustard seeds (for tempering)
  13. Make ready 1-2 Bay leaves
  14. Prepare as required Oil

Jimmikand (as shown in picture below), Green Green chillies (finely chopped), Salt, Onion seeds, lemon juice, Coriander leaves, Mustard oil. Heat oil in a pan, add remaining mustard seeds, remaining red chillies and curry leaves. When the seeds begin to splutter add yam pieces, salt and turmeric powder and toss. Steps to make Yam Curry/Jimmikand Curry:
  1. Cut yam into pieces and pressure cook them until it gets properly cooked.
  2. Now grind soaked black and yellow mustard seeds, poppy seeds salt, turmeric powder, red chilli powder and coriander powder into fine paste.
  3. Now coat boiled yam with a bit if red chilli powder and salt.
  4. Meanwhile heat oil in a wok and shallow fry these yams.
  5. Now take out extra oil from the wok and leave 2-3 tablespoons of oil in it.
  6. Now add bay leaves, black mustard seeds and asafoetida in it and allow them to crackle.
  7. In it, now add ground mustard paste and cook it well.
  8. Now add curd in it and cook it for 5-8 minutes.
  9. Now add water in it as per your requirement and bring it to a boil.
  10. Then add fried yams in it and cook it for another 10 minutes then add lemon juice it and switch off the flame.
  11. Garnish it with coriander leaves and your yam curry/jimmikand curry is ready to serve now.
