Instructions to make Tricolor Halwa Parfait:
  1. For the cucumber halwa, heat pan. Sauté grated cucumber till dry. Then add condensed milk. Add pistachio powder and cardamom powder. Stir till it turns dry. Add ghee. Stir till halwa rolls on the ladle.
  2. For the Poha halwa, heat pan. Sauté soaked mashed Poha till dry. Then add milk to cook Poha. Once it boils, add condensed milk, vanilla essence. Cook till pudding / halwa consistency.
  3. For the apricot halwa. Soak dried apricots in warm water for 10 minutes. Then blend with milk into a smooth thick purée. Heat pan. Add purée and sauté till dry. Add condensed milk. Stir and mix. When dries add ghee and bring to halwa consistency. Garnish with ghee roasted apricots.
  4. Take a serving glass. Fill the glass as layers one by one. Serve warm or cold as preferred.
