- First In a wok / pan heat oil, add chopped bhindis, saute them on a low to medium heat for about 2-3 mins or till the bhindis becomes slightly tender.take them out in a plate keep aside.
- Now in the same pan add cumin seeds and bay leaf saute well, add ginger and green chillies stir well, add chopped onion and saute till light golden. - Add chopped tomato and salt.stir well and cook covered for a min on medium heat.or until tomato gets soft.
- Add all dry spices and stir well.
- Now add fried bhindis and mix well till they well coated with masala.add little water if required and cook covered for 2-3 mins.Add garam masala, kasuri methi, fresh coriander and lemon juice. mix well and switch off the heat.
