- Scrub and boil the spuds for 15 minutes
- Chop the chilli, the coriander and the celery
- When the potatoes are done, empty the water and chuck in the chopped chilli, chopped coriander, the chopped chilli and the tomatoes.
- Stir, bring to the boil and then simmer for 10 mins
- Stir in the prawns and stir for another 5 minutes
- Serve the stew hot, sprinkling on some more chopped coriander
