- Dice potatoes and boil (not to soft)
- Strain and set aside for later
- on medium high heat, heat oil and add garlic (DO NOT BURN)
- deglaze with white wine
- add chicken and veggies
- cover and cook stirring occasionally 15 minutes
- add seasoning cover and cook stirring occasionally 10 minutes
- add potato, buttermilk, heavy cream, and lime juice
- reduce heat to medium and cover, bring to a boil
- while waiting for boil combine flour and water and mix to make a roux
- when you reach a boil stir In roux
- remove from heat and add cilantro
- garnish with green onion cheese and cilantro
