As per the sabzi name, main ingredients are cauliflower and green bell pepper. So basically gobi=cauliflower and shimla mirch=bell pepper or capsicum. Onion-tomato is also added to the dish. Kaddu Simla Mirch Sabzi is a simple sabzi where Pumpkin and Capsicum are simmered in a simple masala along with jaggery giving it a sweet and spicy taste.
Steps to make Cauliflower sabzi (Satvik):
- Cut the cauliflower finely and chop tomatoes roughly. Chop the coriander leaves.
- In kadhai, add oil and add mustard seeds and cumin seeds. Add turmeric and asafoetida. Add curry leaves and chopped coriander leaves and sauté for a minute. Add tomato and sauté.
- Add cauliflower and sauté. Add little water and cook with lid for 15-20 minutes. Add other masaala and salt. Cook for 2-3 minutes and satvik sabji is ready.
