Puran Poli is a sweet flatbread stuffed with a sweet filling (Puran) made from spilt Bengal Gram (chana dal) and jaggery. I will suggest an easy sambar recipe. I have also mentioned about this sambar in one of my answers. Toor dal is best suited for this sambar.
Steps to make Pooran Podi From Leftover Dal:
- Take a pan/ kadhai on medium flame add ghee, boiled dal. Saute it.
- Saute till golden, add jaggery. Mix it well and let jaggery dissolve.
- Grate the nutmeg. Add to the mixture.
- Mix it well and let evaporate the jaggery water. Now add cardamom powder. Mash some dal.
- Mix it and saute it well and get a thick mixture. Knead the dough without salt. Take a lemon size dough. Wrap it in dry flour.
- Roll it like poori. Put 2 tbsp of stuffing. Seal the dough.
- Sprinkle some dry flour. Roll it again.
- Take griddle/ tava on medium flame. Place the pooran Podi on tava. When podi cook from one side and flip it.
- Put ghee on podi, spread the ghee and toast is from both the sides.
- Cut the podi and serve hot.
I have also mentioned about this sambar in one of my answers. Toor dal is best suited for this sambar. This sambar is known as vagarna huli in Kannada and thalitha sambar in Tamil. The stuffing is made from chana dal which are husked and split black chickpeas also known as bengal gram. The sweet element in the stuffing is jaggery which is If everything is done properly then puran poli will puff up.
