- Heat oil in a deep bottom pan/ kadhai, add cardamom, bay leaves, cinnamon and cloves.
- When the aroma starts releasing, add onions and saute till onions are light brown. Add ginger-garlic paste and mix.
- Now add tomatoes and saute. After few minutes add potatoes and cook for 5 minutes.
- After that add all other vegetables and all the spices and give a good mix.
- Now add coriander leaves and rice and mix. Add lemon juice and let it cook for 5 minutes.
- Now add 2 cups water and cover with a tight lid so that the steam doesn't pass. Cook at low flame from 20 minutes.
