The ingredients needed to make Paneer Pulao:
- Get 200 gms paneer, cut into small cubes
- Make ready 2.5 cups basmati rice

- Take For roasted spice powder -
- Make ready 1/2 tsp cumin seeds
- Get 1/2 tsp coriander seeds
- Prepare 4 green cardamoms
- Take 5 cloves
- Get 1 inch long cinnamon stick
- Take 2 black cardamoms
- Make ready 1 mace flower (javitri)
Steps to make Paneer Pulao:
- For making the roasted spice powder dry roast all the above mentioned ingredients together in a pan & then grind them into a fine powder.
- Wash the rice & soak it into a sufficient amount of water for an hour.
- Heat the oil into a pan & fry the paneer cubes until they are light golden brown. Then remove them & keep aside.
- Heat half the amount of the ghee in a pan & add the cumin seeds and bay leaves.
- Saute for a while and then add the onions & carrots.
- Cook for few minutes & then add the ginger paste, red chilli powder, turmeric powder, salt, sugar and half the amount of the roasted spice powder.
- Cook for 2-3 minutes & then add the rice.
- Mix everything very well & then pour the water in double the amount of rice.
- Once the water starts to boil cover the pan & let it sit on medium flame until the rice is thoroughly cooked.
- Then turn off the flame & prepare the final tempering. For that heat the remaining ghee in a pan & add the cashews and resins into it.
- Cook until they are golden brown & then add this tempering into the rice.
- Finally, add the chopped coriander leaves & the remaining roasted spice powder and mix everything very gently without breaking any rice grain.
- Once the rice grains are all nicely fluffed up serve hot with any side dish of your choice.
