  1. Take 1 tbsp sesame oil

  12. Take 2 tbsp black bean sauce
  13. Take 2 tbsp oyster sauce
  14. Prepare 1 tbsp hoisin sauce
  15. Get 1 tsp fish sauce
  16. Take 2 cloves garlic, minced
  17. Make ready 4 cm nub of ginger, minced
  18. Make ready 1 pinch ground black pepper
  19. Get 1 tsp curry powder
  20. Get Slurry
  21. Take 2 tbsp corn starch
  22. Get 1 cup water
  23. Make ready Rice
  24. Get 1 1/2 cups basmati rice
  25. Make ready 3 cups water
Instructions to make Bean Sauce and Rice:
  1. Soak black fungus in bowl of boiling hot water 15 -20 mins or until rehydrated
  2. Rinse rice in the sink 3-4 times or until water is no longer cloudy, then put rice into rice cooker with amount of water required and turn on.
  3. Cut vegetables and set aside.
  4. Add sesame and coconut oil to saucepan on medium high heat, once coconut oil has melted add onions and stir fry until translucent.
  5. Remove black fungus from liquid using tongs and thinly slice.
  6. Mince garlic and ginger, then add all sauce ingredients into bowl with leftover liquid from soaking black fungus and mix until combined
  7. Add carrots to saucepan and stir fry for about 10 minutes, then add fungus and sauce mixture, turn heat to high and bring to a simmer then add kidney beans and broccolini
  8. Combine corn starch and water into a small bowl and mix until fully incorporated to make slurry
  9. Once broccolini has cooked add slurry and mix until sauce has thickened
  10. Turn off heat, serve sauce over rice and enjoy!
